Sprouted Chickpea Cassoulet

Ingredients:

  • 120gm sprouted chickpea
  • 400g tin chopped tomatoes
  • 2 tsp chopped fresh thyme
  • 1 large handful spinach
  • 1/4 packet spaghetti noodles 
  • 1/2 cup grated cheese
  • 1 medium onion diced
  • 3 cloves garlic
  • 1/2 tsp paprika
  • chopped bacon (optional)
  • salt & pepper 

Method:

Preheat oven to 180 degrees.

  1. Cook pasta al dente and drain
  2. Sauté onion, garlic, thyme and paprika until onion soft
  3. Add sprouted chickpeas and tomatoes, season with salt and pepper. Simmer approximately 15 mins. Add a little water if needed to keep moist.
  4. Place pasta in a casserole dish, add chickpea/tomato mixture, bacon (optional), spinach and cheese. Toss until well mixed. 
  5. Cover and bake approximately 20 minutes.
  6. Serve with extra grated cheese and fresh thyme
